( Cheese, that´s a long one :D)
That´s in it:
- sweet-potato- red beans- avocado- celery ( with leaves)- red onion- olive oil- garlic- thyme- rosemary  - honey- pungent mustard- pepper- salad herbs- lime juice- vinegar

1. Peel sweet-potato and chop it (3-4 cm). Put in aluminum foil with pealed finely chopped garlic, olive oil, lime juice, thyme and rosemary.Wrap it up.
2. Pre-heat ofen (about 200 degree celsius).
3. Peel and chop onion (fine), take avocado pulp out of the skin (see pineapple-avocado-spinach gazpacho for advice) and chop, wash and chop celery (leaves and stems about 1 cm).
Put in a salad bowl.
4. Put sweet-potato in the ofen for 15 minutes.
5. Wash red beans.
Put into the salad bowl.
6. Whip up the dressing.
- olive oil (twice the amount of vinegar)- vinegar- honey - mustard- garlic ( peeled and finely chopped)- salad herbs- pepper
7. Take the sweet-potato out and let it cool down for a bit.
8. Add the content of the aluminum foil and the dressing to the salad bowl and mix.
DONE !!!
Note: I think an appel would work in there too.
